INGREDIENTS
Mutton 1 kg (Big pieces)
Basmati Rice 500gms
Salt To Taste
Turmeric 1 Pinch
Red Chilli Powder 1-2 Table Spoons
Garlic ginger paste 2 Table Spoons
Oil -5-6 table spoons
Whole Gram masala 2 Table spoon
Garam Masala Powder 2 Tablespoon
Onions 2 cup fried crisp brown
Crushed Black Pepper 8-10
Black cumin 1 tea spoon
Coriander powder 1 table spoon
Curd 2-3cups
lemon -1
Saffron 1 Pinch
Coriander leaves 1 bunch
Mint Leaves 1 bunch
Rose water (optional)
Cashew Nuts(Optional)
- Soak Basmati rice in Water for 30-40 minutes
- Clean Mutton & tenderize with papaya juice 30 minutes (optional)
- Take meat in a bowl and marinate it with salt(as per your taste),turmeric,Garlic & Ginger paste,Red chilli powder,Add some whole Black cumin,Coriander powder,Garam masala whole(1 tea spoon) and also powder(1 tablespoon), add half bunch of coriander leaves and mint leaves,curd,lemon jiuce, and add some oil and mix all of them and keep it aside for 30-40 minutes and add some oil and mix all of them
- Now take a bowl with Big base(Lagaan) and Boil water and add the soaked rice and do't forget to add some salt,oil,pinch of black cumin and some whole garam masala.When the rice is half cooked(50%) drain the water and keep it aside.
- Now take the Bowl and add the marinated mutton and let it cook in the spices for 4-5 minutes and now add the drained rice and close the lid tightly(airtight) and the some masala powder and the remaining Mint & coriander leaves.Lastly add saffron mixed with 3-4 Tea spoons of water. Sprinkle on top of the rice and close the lid
- Cook it for ten minutes and then take off the bowl and put a pan on the burner and place the Biryani bowl again and let it cook there on low flame for 30-40 minutes
- The preparation method for Hyderabadi Mutton Biryani and Hyderabad Chicken Biryani are same,but the cooking time differs as chicken cooks in Very less time.
